Urban Grill

Here is great way to grill vegetables without a grill. Move an oven rack to the bottom third of the oven  and turn on the broiler. I slice zucchini, fennel, and eggplant in 1/4 inch slices. Onions, cherry tomatoes, and mushrooms also work well. Lightly coat all sides with  olive oil, a pastry brush works well for the slices. Sprinkle with sea salt and fresh ground pepper to taste.

Lay slices in a single layer on a baking sheet and  put the smaller, round vegetables (cherry tomatoes, etc.) in a small baking pan. I use a pie dish. Grill for a few minutes until the vegetables develop small golden bubbly spots There are usually some interesting acoustics. Turn the slices over or shake the pan to coat with the developing juices. Grill a few more minutes. Timing will depend on your broiler. Generally, the vegetables take about 10 – 15 minutes to grill.  Just before serving, sprinkle with chopped fresh marjoram or any herb that you like. A few shavings of fresh Parmesan cheese  and a drizzle of balsamic glaze (redced balsamic vinegar) is delicious. Enjoy them hot or cold at your next urban picnic.
